The best place for this text is Shopify admin → Settings → Policies → Privacy policy, which also links it from checkout. Shopify can generate a starting template there. Review it against Canadian PIPEDA and, if you sell to residents of California or the EU, CCPA/GDPR, then have it checked by a professional.

Fill in: your legal business name and address, a contact email for privacy requests, what personal data you collect and why, which third parties receive it (payment processors, shipping carriers, suppliers, analytics and advertising platforms), how long you keep it, and how a customer requests access or deletion.
